I clean as I go, and I always wipe down the counters. But I also have a dual-compartment sink and no dishwasher, which means that I stack my dishes in one half of the sink (keeping the other half clean and usable) until the end of the day when I do all the dishes at once. To me, handwashing dishes as soon as you dirty them feels like answering every email as soon as it arrives. Batch those tasks!
